Ingredients
  

  • 2 cups frozen pineapple chunks
  • 1 cup full-fat coconut milk from a can
  • ½ cup pineapple juice
  • 1 tablespoon honey or maple syrup optional, to taste
  • Juice of 1 lime
  • ½ –1 cup ice optional, for extra thickness
  • Pineapple wedges and maraschino cherries for garnish

Instructions
 

  • Prep Ingredients: Measure and prepare all ingredients. If your pineapple isn’t frozen, add more ice to thicken the drink.
  • Blend: In a blender, combine the frozen pineapple, coconut milk, pineapple juice, lime juice, and optional sweetener.
  • Add Ice (Optional): If desired, add ice to make it more frosty.
  • Blend Smooth: Blend on high for 30–60 seconds until creamy and smooth.
  • Taste & Adjust: Taste and adjust sweetness or tartness as needed.
  • Serve: Pour into glasses and garnish with pineapple wedges and cherries.
  • Enjoy: Serve immediately with a straw or spoon!

Notes

Sweetener Tip: If your pineapple is very ripe, you may not need any extra sweetener.
Coconut Milk Options: Use full-fat canned coconut milk for a creamier texture; light coconut milk can be used for a lighter version.
Serving Ideas: Great served with grilled dishes, tacos, or fruity desserts.
Storage: Best enjoyed fresh. Leftovers can be stored in the fridge for up to 24 hours and shaken before serving.
Freezing Option: Freeze leftovers in ice cube trays and reblend for a slushy treat later.
