Equipment

  • Large skillet or sauté pan
  • Small bowl for breadcrumbs
  • Tongs or spatula for flipping shrimp
  • Knife and Cutting Board
  • Measuring spoons
  • Zester or grater for lemon zest
  • Serving dish or plates

Ingredients

  • For the Shrimp:
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the Sauce:
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1/4 cup white wine or chicken broth
  • 1 cup cherry tomatoes halved
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp red pepper flakes optional
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • For the Topping:
  • 1/2 cup breadcrumbs preferably toasted
  • 2 tbsp olive oil or butter for toasting the breadcrumbs

Instructions

  • Prepare the Shrimp: Season the shrimp with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  • Make the Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Pour in the white wine (or chicken broth) and let it simmer for 2-3 minutes until it reduces slightly. Add the halved tomatoes, lemon zest, and lemon juice. Stir to combine and let it simmer for another 2-3 minutes until the tomatoes begin to soften.
  • Combine Shrimp and Sauce: Return the cooked shrimp to the skillet and toss them gently in the sauce, ensuring they are well-coated. Cook for another 2 minutes to heat through. Stir in the fresh parsley, basil, and red pepper flakes (if using).
  • Toast the Breadcrumbs: In a small skillet, melt the olive oil or butter over medium heat. Add the breadcrumbs and cook for 2-3 minutes, stirring constantly, until they are golden brown and crispy.
  • Serve: Plate the shrimp with the sauce and sprinkle the toasted breadcrumbs on top. Garnish with additional fresh herbs, if desired.
