Ingredients
  

  • 1 cup dried peaches huesillo
  • 1 cup wheat kernels mote
  • 4 cups water for peaches and syrup
  • 1/2 cup sugar adjust to taste
  • Ice cubes optional, for serving

Instructions
 

  • Prepare the Peaches: Place the dried peaches in a bowl and cover with water. Let them soak for at least 4 hours or overnight to rehydrate. After soaking, drain the peaches and set them aside.
  • Cook the Wheat: In a large pot, rinse the wheat kernels under cold water. Add 3 cups of water and bring it to a boil. Lower the heat and let the wheat simmer for 20-30 minutes or until tender. Drain and set aside.
  • Make the Syrup: In a medium saucepan, combine 4 cups of water and the sugar. Bring to a simmer, stirring until the sugar dissolves. Let it simmer for 10-15 minutes to thicken slightly.
  • Combine: In glasses, add a few spoonfuls of the cooked wheat. Add 2-3 pieces of rehydrated peaches to each glass. Pour the syrup over the wheat and peaches, filling the glass. Add ice cubes if desired.
  • Serve: Stir gently and serve chilled for the perfect refreshing treat.
