- Dry Ingredients:
- 2 cups rolled oats
- 1/2 cup whole wheat flour or all-purpose
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- Wet Ingredients:
- 1 cup unsweetened applesauce
- 1/4 cup maple syrup or honey
- 1/4 cup melted coconut oil or other neutral oil
- 1 tsp vanilla extract
- Optional Add-ins choose 1–2:
- 1/4 cup chopped nuts walnuts, pecans, almonds
- 1/4 cup raisins or dried cranberries
- 1/4 cup mini chocolate chips
- 1/2 tsp nutmeg or pumpkin spice for extra flavor
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or lightly grease it.
In a large mixing bowl, combine the dry ingredients: oats, flour, cinnamon, baking powder, and salt.
In a separate bowl, whisk together the wet ingredients: applesauce, maple syrup (or honey), melted coconut oil, and vanilla extract.
Mix the wet ingredients into the dry ingredients until fully incorporated. If using any add-ins, fold them in now.
Pour the batter into the prepared baking pan and spread evenly using a spatula.
Bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Cool in the pan for 10–15 minutes, then lift out (if using parchment paper) and let cool completely before slicing into bars.
