Equipment

  • Medium saucepan
  • Shallow baking dish or pan (preferably a metal or glass dish)
  • Fork (for scraping)
  • Measuring Cups and Spoons

Ingredients

  • 2 cups almond milk unsweetened or sweetened
  • 1/2 cup sugar adjust to taste
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  • Prepare the Almond Base: In a medium saucepan, combine almond milk, sugar, vanilla extract, and a pinch of salt. Heat over low heat, stirring occasionally until the sugar dissolves completely. Remove from heat and allow it to cool to room temperature.
  • Freeze the Mixture: Pour the cooled almond milk mixture into a shallow dish or baking pan. Place it in the freezer.
  • Scrape the Granita: Every 30 minutes, use a fork to scrape the mixture, breaking up any ice crystals that form. Continue scraping until the entire mixture becomes fluffy and grainy. This will take about 3-4 hours.
  • Serve: Once the granita has fully frozen and is light and fluffy, scoop it into serving bowls or glasses. Garnish with toasted almonds or a drizzle of honey, if desired.
