Equipment

  • Grill or oven
  • Baking sheet (if baking)
  • Fish spatula (if grilling)
  • Mixing bowl
  • Knife
  • Measuring spoons
  • Parchment paper (if baking)
  • Tongs (if grilling)

Ingredients

  • 2 whole African Pompano fish or 4 fillets
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish optional
  • Lemon wedges for serving optional

Instructions

  • Clean the Fish:
  • If using whole African Pompano, gut the fish and remove the scales. Rinse thoroughly under cold water to ensure they’re fully cleaned. If using fillets, make sure they are fresh or thawed.
  • Prepare the Marinade:
  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, thyme, salt, and pepper. Stir well to combine and coat the fish thoroughly with the marinade. Allow the fish to marinate for at least 15 minutes.
  • Cooking the Fish:
  • Grilled African Pompano:
  • Preheat the grill to medium-high heat. Place the fish on the grill, skin-side down, and cook for 4-5 minutes per side or until the flesh is opaque and flakes easily.
  • Baked African Pompano:
  • Preheat the oven to 400°F (200°C). Place the marinated fish on a baking sheet lined with parchment paper and bake for 15-20 minutes or until the fish is fully cooked.
  • Serve the Fish:
  • Once the fish is cooked, garnish with fresh herbs and serve with lemon wedges. You can pair the fish with a side of roasted vegetables, rice, or a fresh salad.

Notes

How to clean African Pompano
Marinating Tip: You can marinate the fish for longer (up to an hour) for a more intense flavor, but 15 minutes is usually sufficient.
Grilling Tip: Be careful not to overcook the fish, as it can become dry. Fish should be opaque and flake easily when tested with a fork.
Substitutions: If you don’t have olive oil, you can use melted butter for a richer flavor. Feel free to add chili flakes for a spicy twist.
