Ingredients
  

  • 2 medium yellow squash sliced ¼-inch thick
  • 1 cup all-purpose flour or ½ cup flour + ½ cup cornmeal for extra crunch
  • 1 egg
  • ¼ cup milk
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp paprika optional
  • Vegetable or canola oil for frying

Instructions
 

  • Prep the Squash
  • Wash and dry squash. Slice into ¼-inch rounds and set aside.
  • Make the Coating
  • In one bowl, whisk together egg and milk.
  • In another bowl, mix flour (or flour + cornmeal), salt, pepper, and paprika.
  • Dredge the Slices
  • Dip each squash slice into the egg wash, then coat evenly in the flour mixture.
  • Heat the Oil
  • Pour oil into a skillet (about ½ inch deep) and heat over medium-high. Oil is ready when a small piece of batter sizzles immediately.
  • Fry the Squash
  • Fry in batches for 2–3 minutes per side until golden brown. Do not overcrowd the pan.
  • Drain and Serve
  • Remove fried squash with a slotted spoon and place on paper towels. Serve hot with your favorite dipping sauce or toppings.
